The Perfect Cup Of Japanese Tea

A nice cup of tea is universally enjoyed and has been for centuries. It is a very refreshing beverage, very good for you and has great calming properties. Green tea in particular has many additional health benefits. Making a good cup of Green tea is not difficult to do, but there are a few things to be considered.

Make sure you are using good clean water; preferably use a water purifier to get rid of any impurities. Alternatively you can use bottled water. Good quality water produces great tasting green tea.

The water temperature is very important. It is a common mistake to make but if the temperature is too hot the tea will taste very bitter. The correct temperature does vary between the different green tea leaves but for most it is best to brew the tea around 165-170 degrees F (73-76 C.)

The proportion of Green tea to water usually is 1 heaped teaspoon (5 grams) per 8 ounces of water. It should then be brewed for no longer than two minutes. It’s also very important not to stir, shake or mix the tea.

Some would say using a traditional Japanese tea pot is best when brewing green tea as the leaves needs room to expand and infuse the water with their delicate flavours, but you can still get good results from using a large teapot.

Follow these simple steps and you can’t go wrong:

Step 1 - Boil the water in the kettle, and then remove from the heat. Your water temperature should be close to 200 F (93c)
Step 2 - Pour the hot water into the tea pot (do not add the tea leaves just yet) Water temperature then drops to around 185 F (85 C) an added benefit of this is at the teapot is then pre-warmed at the same time.
Step 3 - Leave the water to stand for about a minute then pour hot water from the teapot filling the teacup(s). Drain the excess hot water from the teapot.
Step 4 - Add one teaspoon (6 grams) of loose leave green tea into the now warm, empty teapot.
Step 5 - Pour the hot water from the teacup(s) back directly into the teapot and infuse for 2 minutes. At this point the temperature of the water will be around 165-175 degrees F (70c) which is the perfect temperature for brewing teas like Sencha.
Step 6 - Pour into Tea cup(s) and enjoy!!
